Tiramisu is a classic for a reason
This Tiramisu always takes me back. It was a best seller when I was running my bakery “Piece of Cake” in Lahore, and I still make it so often. I make Tiramisu with or with out egg yolks and it turns out great both ways. I love how balanced this dessert is. The strong coffee absorbs into the sweet lady fingers. The mascarpone is lightly sweetened and mixed into a rich, custard like cream. It’s all layered together and topped with a dusting of cocoa powder, and my personal favorite, fresh raspberries.
It’s a layered process, but it’s worth it
I make this two ways, with or without the egg yolks. If you don’t feel comfortable using raw egg yolks or simply don’t have the time or eggs, you can skip them. The cream mixture won’t be as rich but it will still taste great. Either way, this recipe takes less than 15 minutes. Since this is a no bake dessert, it’s important to use good quality ingredients. Make sure you use good, strong coffee. And the mascarpone must be the best! When I was in Lahore it was hard to come by mascarpone all the time so I would substitute it with cream cheese and it worked.
Tiramisu fit for a party
This looks great in a glass dish or trifle bowl, but make individual servings for a really professional look. It will wow your dinner guests and serving it up will be way easier. You can find disposable dessert shooters in multiple shapes at the Dollar Store and Party City. It takes a little longer to layer all those mini desserts, but they look great and they are the perfect serving size. Get some mini spoons and you’ll have yourself a dessert table that looks catered.
More no bake desserts to try:
- 2 egg yolks
- ¼ cup sugar
- 1 cup heavy cream
- ¼ cup icing sugar
- 1 tsp vanilla extract
- 8 oz mascarpone cheese
- 24 ladyfingers
- 1½ cups strong coffee
- 1-2 tbsp cocoa powder
- In a medium bowl whip thee egg yolks and sugar till they triple volume, turn pale yellow and are at the ribbon stage. In a separate bowl whip the cream, icing sugar, vanilla and mascarpone till soft peaks form. Fold both mixtures together until smooth.
- Dip the lady fingers in the coffee and place in a single layer in a medium dish. Add half the cream mixture and spread evenly. Repeat both steps to form a second layer. Dust the top with cocoa powder and refrigerate for at least 2-3 hours before serving.
- Serve with fresh raspberries and chocolate shards.
