I’m very proud of myself. I did it. I combined two of my favourite things and it’s delicious! It was just a regular Friday and I was about to boil some chicken for chicken salad sandwiches, and it hit me. If I can conquer my fear of making shami kabab, why can’t I make club sandwiches, something I crave incessantly (I’ve tried club sandwiches in every restaurant that has them on their menu in Lahore). And then I opened my fridge to take out eggs to boil, and I saw caesar salad dressing and I thought to myself, Fatima, if you can somehow make your club sandwich taste like your all time favourite salad, you’re a genius. So I did. Every component fits together perfectly. The crispy croutons are replaced by pan fried bread. The grilled chicken and dressing is transformed into a chicken mixture. The classic boiled egg and tomato slices are literally the perfect finishing touches and once you take a bite you’ll realize what i’m talking about.
Here’s what you’ll need for 4 club sandwiches
12 slices of bread
2 chicken breast fillets, boiled and shredded
1/2 cup shredded cabbage
2 Tbsp mayo
2-3 Tbsp caesar dressing
1 tsp mustard
2 Tbspn grated parmesan
1/2 tsp black pepper
salt to taste
3 hard boiled eggs, sliced
thinly sliced tomatoes
shredded lettuce
extra mayo for bread
oil for toasting bread*optional
Start off by preparing the chicken mixture. I alway boil chicken for sandwiches with a bay leaf, 4-5 whole peppercorn and a little salt. This ensures that the chicken doesn’t smell. Once cooked, shred the chicken. In a medium bowl add the shredded chicken, cabbage, mayo, dressing, parmesan, mustard, salt and black pepper. Mix and set aside.
In a pan or skillet toast the bread in a little oil. Once the bread has cooled slightly start assembling the sandwiches. You can also skip this step, as I often do. Spread some chicken mix onto a slice of bread. Add some shredded lettuce. Place another piece of bread on top, and spread some mayo on it. Then place the sliced tomatoes and eggs, sprinkle over some black pepper and top off with another sliced of bread. Cut at an angle to make two triangular pieces. Serve with fries or chips.
