This French Toast is a recreation of my favorite entree from my favorite brunch spot, and it’s delicious! A rich Brioche bread drenched in a vanilla custard, dipped in a flurry of crunchy cinnamon cereal, fried in butter and finished off with whipped cream and berries. Breakfast really can be beautiful, can’t it? This is something you can make for a crowd, or just for yourself. It doesn’t have to be a special day to indulge a little, so this can be your Monday morning pick me up for all we know! All I know is that I make this any day of the week, and it’s the perfect way to start your day.
Here’s what you need:
6-8 thick slices of white or brioche bread
1/3 cup sugar
1 tsp ground cinnamon
1 cup milk
1 tsp vanilla extract
2 cups crushed frosted corn flakes
butter for frying (plus a little oil)
In a shallow dish beat the eggs with the sugar and cinnamon until slightly frothy, then whisk in the milk and vanilla. In another shallow dish spread out the crushed cornflakes. In a large frying pan add some butter and a few drops of oil and let it melt over a medium low flame. Dip the bread slices into the custard for about 30 seconds on either side. You want them to absorb just enough of the custard, not too much. Carefully transfer to the corn flakes and roll the dipped bread around so it’s covered. Carefully set the covered bread into your frying pan and cook over a medium low flame for about 2-3 minutes on either side, just until the toast is golden brown. Serve with a dusting of icing sugar and fresh berries.
