Papri Chaat is, in my opinion, the king of chaats. Just the sight of it makes me happy. And honestly, what’s not to love? Chickpeas and potatoes drenched in spicy chutneys and a cooling yogurt sauce, topped with freshly ground cumin and crunchy papad. Sigh… (This can easily be made vegan by subbing the yogurt for a vegan option!)
These samosas are little pieces of heaven. You bite into a crispy golden shell filled with keema (ground beef) laced with earthy spices and pops of green from the fresh coriander. Dip it into a combination of mint chutney and imlee and you will truly be amazed at how all the flavors combine.
It’s essentially your classic roti/paratha with meat, salad and chutneys all rolled in one, but the act of rolling everything together just elevates the flavors and allows them to truly combine, creating a memorable experience, which is why I make paratha rolls so often…
