Creamy Mushroom Chicken

This is a quick and flavorful recipe that comes together in 30 minutes. Charred chicken is simmered in a creamy mushroom and spinach sauce.

  • 4 chicken breast fillets butterflied
  • 2 tbsp oil flavorless
  • salt and pepper for chicken to taste
  • 1.5 cups baby bella mushrooms sliced
  • 2 cups baby spinach stemmed
  • 1 tbsp worchestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp white pepper
  • 1/2 tsp mustard powder
  • 1/4 tsp dried tarragon
  • 1/4 tsp dried rosemary
  • 1 cup heavy cream


  • Sprinkle a little salt and pepper over each chicken fillet on both sides. Heat the oil in a pan and add the chicken. Pan fry on both sides for 3 minutes, or until a light golden brown.
  • Remove the chicken fillets from the pan. If no oil is left add 1 tsp more oil. Add the sliced mushrooms and all the seasonings and herbs. Saute for 4 minutes, then add the baby spinach and saute until wilted.
  • Add the worchestershire sauce and heavy cream and bring to a simmer. Add the chicken fillets back in and simmer covered for 3-4 mimnutes to let the flavors infuse. Serve immedietely.


The chicken. When I make any sort of pan fried chicken, I alway butterfly the chicken breast. In fact, I have my butcher do it. It makes the chicken thinner so it cooks more evenly and doesn't dry out. Google 'how to butterfly chicken breast' and many tutorials come up.
Variations. I love using heavy cream in this. There's not much for the amount of servings, but if you absolutely must, replace it with half and half. The sauce won't be as thick but will still give a similar flavor.
I use baby Bella mushrooms, but you can use white mushrooms as well. Even canned button mushrooms work in this if you can't find fresh ones. 
I use tarragon and rosemary in this. Other herbs to try are oregano, thyme or basil. I prefer using dried herbs in this, as it already has fresh spinach.
If you want to skip the spinach, you can. My husband hate spinach, so I don't add it when I make this sometimes so he doesn't have to pick it out.
How to reheat. I do not recommend reheating this in the microwave. Reheat it stove top over a low flame, and add a splash of milk or cream to loosen up the sauce.
