- Preheat your oven to 360 F
- In a medium bowl mix together the butter and sugar until smooth. Add the egg and mix till combined.
- Fold in the flour, salt, baking powder, chocolate chips and nuts. Mix until just combined. No flour streaks should remian.
- Spread out evenly in an 8x8 inch greased baking dish. Bake for 20-23 minutes, or until the edges are golden brown and the center is almost set. Then remove from the oven and let it cool completely before cutting into bars or digging in.
Notes
Substituions.
Replace the brown sugar with 3/4 cup granulated sugar plus 1 tablespoon of corn syrup. I like walnuts in this, but you can use any nuts. Some that go great in this are pistachios, pecans and macadamia nuts.
Baking time. The center will look very gooey and soft when you take the cookie out of the oven. As it cools it sets slightly. The egg in it is not raw. If you over bake the cookies it's ok. The center may not be as gooey but they'll still taste great.
Cut them. If you want clean edges wait until they are completely cooled and use a sharp knife to cut them.
Serve them. You can bake this in a skillet and serve warm with scoops of ice cream on top, or you can cut these into bars and serve on their own.
Store them. These store great for a few days in an airtight container at room temperature.
