Gluten Free Apple Crisp

This gluten free apple crisp has all the flavors of apple pie but none of the fuss. It has minimal prep time and bakes beautifully. Enjoy it with a scoop of ice cream, a dollop of cream or on it's own with a cup of coffee.

Ingredients
  

For the apples
  • 2 apples peeled and sliced
  • 1/2 tsp orange zest
  • 2 tbsp orange juice
  • 1 tbsp brown sugar or granulated sugar
  • 1/4 tsp ground cinnamon
  • 1/6 tsp ground nutmeg
  • 1 tbsp corn starch
For the streusel topping
  • 4 tbsp cold butter diced
  • 1/4 cup almond flour
  • 1/4 cup crushed walnuts or pecans
  • 1/4 cup rolled oats
  • 1 tbsp brown sugar or granulated sugar
  • 1/4 tsp ground cinnamon
  • pinch nutmeg
  • pinch salt

Method
 

  1. Preheat your oven to 380 F.
  2. In a medium bowl mix all the ingredients under apples. Mix until combined, then place in a medium, lightly greased baking dish.
  3. Add the ingredients for the topping in the same bowl you used for the apples, and break the pieces of butter into the dry ingredients, until the mixture resembles large crumbs. If the butter is too soft freeze for a couple minutes to harden it.
  4. Press the topping onto the apples. Bake for 35-40 minutes, or until the crisp is golden brown and the edges are bubbling. Serve warm. Refridgerate leftovers.

Notes

Substitutions. 
If you don't want to use almond flour you can simply replace it with flour or any flour substitute.
If you don't have walnuts or pecans, almonds work great in this.
Make it dairy free by replacing the butter with coconut oil. Start with 3 tablespoons and see if you need more.  
Variations. 
You can add other fruit like berries to the apples. Raspberries work great in this. 
If you don't like orange flavor you can skip it in this. Add 1 tablespoon lemon juice instead of the orange juice to the apples.
