- In a medium bowl add all the ingreidents listed under chicken and let them marinate for 10 minutes. Prepare the chow mein noodles or spaghetti according to package instructions. In a small bowl mix the ingredients under sauce and set aside.
- Heat the oil in a large wok and stir fry the chicken on a medium high flame for 6-8 minutes, until it is a light golden brown. Add the carrots, cabbage and mushroom and stir fry for 2 minutes.
- Add the prepared noodles and the sauce. Add the seasoning and stir fry for 4-5 minutes on a medium high flame. Taste for seasoning and adjust. Add the green onions and serve immedietaly. Refrigerate leftovers.
Notes
The noodles. I know it's difficult to find Chow Mein noodles(not the cracker like ones. I use the web pac ones) at every grocery store. I also don't alway shave Chow Mein noodles at home, but I always have pack of spaghetti, and that works great in this. You can use thin spaghetti or normal spaghetti. I use approximately 3/4 of the box, which is about 12 oz.
The vegetables. I like keeping the vegetables little crunchy. You can add any vegetable you prefer. Other options besides the ones mentioned above are broccoli, bean sprouts and bell peppers.
Save some time. I like being quick in the kitchen, which is why I use a coleslaw bag for this chow mien. It saves time when I don't have to finely chop cabbage. I also use ready to use matchstick carrots.
Don't like chicken? Don't worry about it. Use the same recipe, just replace the chicken with lean beef strips or shrimp. If you want to go all out, add a combination of two!
