Chicken Chow Mein is everyone’s favorite noodle dish, and it comes down to the sauce
Chicken Chow Mein is an instant favorite. Everyone loves it, and I think it comes down to the flavor the noodles get when they’re stir fried in the sauce. There is such a distinct savory flavor that coats the chicken, vegetables and noodles, and that is why I love it the most. This is also a great way to get your veggies in. I love adding chicken to mine, but shrimp or just veggies go great.
A few ingredients give this it’s classic Chow Mein flavor
There are some ingredients I would not substitute or try to find replacements for. Sesame oil and soy sauce give these noodles a great savory flavor. You just don’t get the flavors without these two. The jury is still out on the noodles though. I know Chow Mein noodles should be used for this, but there have been times where I haven’t been able to find them. This happens very often, which is why I often use simple spaghetti for this. The texture is not the same as the crinkly Chow Mein noodles you should use for these, but you can achieve the same flavor by stir frying the noodles with a small sprinkle of corn starch.
Variations make it your own
I love adding my own touch to recipes, and you can easily add your own to this chicken Chow Mein. I mix up the vegetables, depending on my mood and what I have at home. I have listed a few substations and options in the recipe notes below. This recipe is full of flavor, but if you like spicy food you should definitely try these spicy chicken noodles. It’s basically Spicy Chicken Chow Mein and it’s delicious. It’s very similar, just the sauce is a little different.
Chicken Chow mein
- 1 pound boneless chicken strips thighs or breast fillets
- 2 tbsp soy sauce low sodium
- 1 tbsp vinegar
- 2 tbsp corn starch
- 1 tsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
For the Chow Mein
- 12 oz chow mein noodles or thin spaghetti
- 3 tbsp oil flavorless
- 1 cup shredded carrots
- 2 cups shredded cabbage
- 1 cup baby bella mushrooms sliced
- 1/2 tsp white pepper
- 1/4 tsp black pepper
- salt to taste
- 1/4 cup sliced green onions for garnish
For the Sauce
- 1/4 cup soy sauce low sodium
- 3 tbsp oyster sauce
- 2 tbsp sesame oil
- In a medium bowl add all the ingreidents listed under chicken and let them marinate for 10 minutes. Prepare the chow mein noodles or spaghetti according to package instructions. In a small bowl mix the ingredients under sauce and set aside.
- Heat the oil in a large wok and stir fry the chicken on a medium high flame for 6-8 minutes, until it is a light golden brown. Add the carrots, cabbage and mushroom and stir fry for 2 minutes.
- Add the prepared noodles and the sauce. Add the seasoning and stir fry for 4-5 minutes on a medium high flame. Taste for seasoning and adjust. Add the green onions and serve immedietaly. Refrigerate leftovers.
