Skinny Chicken Enchiladas

These skinny enchiladas have all the flavor but only some of the calories. These are a lighter take on enchiladas but you'll love them just the same. They're a perfect weeknight meal, and they work great for meal prep.

Ingredients
  

Chicken Filling
  • 1 pound boneless chicken thinly sliced
  • 1 tbsp oil
  • 1 tbsp taco seasoning
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/2 tsp garlic powder or 1 clove garlic, crushed
  • 1/2 tsp chili flakes
  • salt to taste
  • black pepper to taste
  • 2 bell peppers thinly sliced
  • 1/2 onion thinly sliced
Enchiladas
  • 10 low carb tortillas 8 or 10 inch size
  • 3 tbsp heavy cream or half and half
  • 1/2 cup taco sauce mild or hot
  • 3 tbsp water
  • 1.5 cups part skim mozzarella shredded
  • 1/4 cup green onions sliced

Equipment

  • 13x9 baking Dish

Method
 

  1. Preheat your oven to 380 F.
  2. In a pan heat the oil and add the chicken strips. Add the seasonings listed under chicken and suate for 3 minutes. Then add the sliced onions and bell peppers and saute for 2 minutes, then cover and cook for 5 minutes.
  3. Divide the chicken mixture between the tortillas and roll into burritos. Place fold side down in your greased baking dish.
  4. In a small bowl mix the cream, taco sauce and water. Spread the sauce over the rolled tortillas edge to edge. Sprinkle over the cheese and green onions. Bake for 20-25 minutes, or until the cheese starts turning golden brown. Serve warm.

Notes

Substitutions. Make these gluten free by switching to corn tortillas.
Make these dairy free by using cheese and cream alternatives of your choice. 
Variations. I love adding different vegetables to the filling. You can add beans, chopped zucchini, peppers or corn. 
Spice. Cut the spice by using less in the filling, and use a mild taco sauce.
