
Fajita’s need no introduction. You order them at a restaurant and you need an extra table to fit all the sides, but my motto is simplicity, so here’s a recipe that takes no longer than 25 minutes to make. You can keep it as simple or as decadent as you want, but this basic recipe is perfect for when you’re in a time crunch, or just don’t have lots of energy to cook up a storm.
Here’s what you need for about 8 fajita’s
8 tortillas (prepare according to package instructions)
1 pound chicken fillets, thinly sliced
1 tsp garlic, crushed
1 Tblspn taco seasoning
2 Tblspn soy sauce
salt and pepper to taste
1 bell pepper, thinly sliced
1 carrot, thinly sliced
1 onion, thinly sliced
salsa, for serving
oil for cooking
Heat a little oil in a pan and add the chicken and garlic. Saute till almost cooked.
Then add the vegetables, seasoning and soy sauce and mix well. Cover and cook on a medium low flame for 2-3 minutes, then turn the heat off.
Heat the tortillas in the microwave or stovetop, divide the mixture between the tortillas, roll them up and serve warm.
You can add cheese, beans, corn, and salsa as well to add more flavor.
There you have it! A super simple dinner or lunch, made in less than 20 minutes. This is my weeknight savior!
