I love making quesadillas, and these loaded quesadillas are the best! It's a great meal that is easily customizable, and you only need a few simple ingredients to make them. The purest form of a quesadilla is just cheese melted into a tortilla, but these loaded quesadillas have black beans, salsa, chicken and peppers to add a lot of flavor and make them more filling and wholesome. These are great for a light lunch, snack, or dinner! You can easily make these gluten free by subbing the tortillas for corn ones, and you can skip the chicken to keep these vegetarian.

I love adding tex mex flavors to just about anything, like my Zesty Veggie Enchiladas, and this lasagna is taken over the top with all the flavors added to it. The corn and beans add such different textures, and my special secret ingredient adds a delicious earthy crunch you will go crazy for! I've been making this version for about a year now, and thought it was time to share it with you all. I use oven ready lasagna sheets which take a lot of prep time out, which is just added to the baking time, but as long as I don't have to do anything while it's in the oven, I'm happy:)

These Tex Mex Egg Rolls are so good and they're vegetarian! I made a big batch of Veggie Enchiladas one day, which are to die for by the way, and had some filling leftover. Instead of making another tray of enchiladas, I decided to try my hand at these egg rolls, and since that day I have always had a batch of these in my freezer. You can make mini ones by rolling the egg roll pastry a little tighter, or keep them full size like these. They make a great party appetizer, are a great picnic food, and they will make your afternoon tea spread a memorable one.
