Shrimp Linguine

…We were aimlessly walking around until I came across an empty restaurant with a barely visible menu plastered outside. I squinted through the snow (yes it had started snowing at that point) and saw they had pizza and pasta, and that was enough for me. We walked in on that cold winter afternoon, and we never looked back. It became our little haven, our happy place, and boy do I miss going there ever since Covid hit. Everything on their menu is “chef’s kiss” but my favorite is their shrimp linguine. I’ve been missing it so much that I decided to recreate it at home, and it turned out pretty darn amazing…

TexMex Lasagna

I love adding tex mex flavors to just about anything, like my Zesty Veggie Enchiladas, and this lasagna is taken over the top with all the flavors added to it. The corn and beans add such different textures, and my special secret ingredient adds a delicious earthy crunch you will go crazy for! I’ve been making this version for about a year now, and thought it was time to share it with you all. I use oven ready lasagna sheets which take a lot of prep time out, which is just added to the baking time, but as long as I don’t have to do anything while it’s in the oven, I’m happy:)

I’ve loved these little bundles of cheese for as long as I can remember. My mom used to make a huge pyrex dish of them, so it would last two days, and I would keep sneaking into the kitchen and scarf one down while no one was watching until I’d made a huge dent, after which I would run upstairs and pretend to sleep so I wouldn’t be caught!
