This fluffy cream cheese frosting is made using no butter. It's just a handful of ingredients and it takes a few minutes to whisk together. You won't see anyone wiping the frosting off or pushing it aside. It's light and delicious! I love adding some fresh lemon zest to brighten it up. This frosting goes great on vanilla cupcakes, carrot cupcakes and even chocolate cupcakes...
Chocolate Chip Skillet Cookie
Is it just me, or does a cookie, especially a peanut butter laced chocolate chip cookie, taste better out of a skillet? I've always just made normal cookies, or cookie bars, but I recently got into making skillet cookies, and this chocolate skillet cookie is the real deal. I tried so many different variations until I found the gooiest of them all. And I'm happy to report this ticks all the boxes. It has crispy edges, a gooey center, a hint of peanut butter and whole lot of chocolate.
Mango Lassi Cupcakes
I love lassi. Meethi Lassi(sweet lassi) is my favorite thing to order when I visit Lahore, but Mango lassi is something I order everywhere, because let's face it, it's the best! Yogurt and sweet mangoes blended into a thick milkshake consistency, it just screams summer to me. The tart yogurt balances the sweet mango so well. So obviously I was going to turn it into a dessert...
There's a lot to be said about a cheesecake. For one, there's nothing else like it. It's so rich in flavor, with the cream cheese slow cooked in the oven. It's lightly sweetened, as in my opinion, the best desserts are. The crust is just hearty enough to hold it together, but it doesn't over power the flavor one little bit. But most importantly, it's down right delicious! I love a classic cheesecake. And this one is good enough to be eaten all on its own. No berries or coolis in sight. As classic as this cheesecake is, I've tweaked it just a bit, obviously, to make it a little lighter. It still packs amazing flavor and texture, it's just on the fluffier side, and who doesn't like a fluffy cheesecake?
