Shrimp Linguine

…We were aimlessly walking around until I came across an empty restaurant with a barely visible menu plastered outside. I squinted through the snow (yes it had started snowing at that point) and saw they had pizza and pasta, and that was enough for me. We walked in on that cold winter afternoon, and we never looked back. It became our little haven, our happy place, and boy do I miss going there ever since Covid hit. Everything on their menu is “chef’s kiss” but my favorite is their shrimp linguine. I’ve been missing it so much that I decided to recreate it at home, and it turned out pretty darn amazing…

I’ve loved these little bundles of cheese for as long as I can remember. My mom used to make a huge pyrex dish of them, so it would last two days, and I would keep sneaking into the kitchen and scarf one down while no one was watching until I’d made a huge dent, after which I would run upstairs and pretend to sleep so I wouldn’t be caught!

There are some things we loved eating when we were kids, and they still us back when we eat them now. Chow Mein is something that was a regular in our home. I love it, and I make it often, but we did grow up, after all, so shouldn’t the food we loved as a child grow up too? That’s what this is. Grown up Chow Mein.
