I’m a true pizza lover. I make it so often that my three year old daughter could make it on her own because she’s seen me make it so many times. But i’m obsessed with making every thing into individual servings, with all this tasting menu business everywhere on pinterest. So I decided to make pizza cups, and I definitely don’t regret my decision.
The main part is the dough, and I use store bought yeast rolls, which makes everything so easy to put together that you could make a hundred of these without breaking a sweat. You can use homemade pizza dough, but it own’t give you the same result.
Here’s what you’ll need for one dozen pizza cups
12 frozen yeast rolls
1/2 cup pizza sauce
1/2 bell pepper, diced
1/2 cup diced mushrooms
1 cup shredded mozzarella (dice if you’re using fresh)
salt and chilli flakes to taste
Grease a cupcake tin and place one roll in each compartment. Let them rise for about 3-4 hours. If you know you’re going to make them the next day place them in the fridge covered over night. Then take them out an hour before you need them and they’ll rise perfectly.
Once they’ve risen press the centers down with your fingers to create a cup like shape. Then score the bottom of each dough cup with a fork or knife, that way the rolls won’t rise from the centre and the fillings won’t ooze out and make a huge mess.
Add 1/2 tsp sauce, then some cheese, then some veggies. Then add another 1/2 tsp sauce, cheese and veggies. Then sprinkle a pinch of salt and chilli flakes on each pizza cup.
Bake at 375 F for 10-15 minutes. Basically you need to look out for the cheese. Once it’s golden brown they’re done.
Serve warm with some extra sauce on the side for dipping. You can play around with the toppings as well! Add pepperoni, more veggies, chicken, ground beef, or keep it simple with just sauce and cheese!
