Chicken Fajita Pizza

Chicken Fajita Pizza

This recipe takes me back tot he taste 90's, early 2000's, when Pizza Hut was the coolest new place in Pakistan. The salad bar was everyone's favorite bar, and that potato salad still hits the spot. But it was their Chicken Tikka pizza and Chicken Fajita Pizza that really made the rounds on every table. It was perfection. You mix the spicy, local flavors of Pakistan into the classic American pizza chain and what you got was delicious. This recipe is an ode to that hype, and it definitely lives up to it...

Veggie Enchiladas

Veggie Enchiladas

Enchiladas are a family favorite. I'm glad they are because they're so easy to make, but that's not the only reason I love them. They combine all my favorites, soft tortillas, a zesty filling and a whole lotta cheese. I have a chicken version of Enchiladas up on the blog already, and they are amazing in their simplicity, but there's something about these veggie enchiladas. The earthy notes balanced out with spicy jalapeños. A cooking creamy tomato sauce and the perfect amount of bubbling cheese studded with green onions. It's beautiful. (This can easily be made gluten free by using corn tortillas)...

20 Minute Taco Meat

20 Minute Taco Meat

Taco Tuesday will be a breeze with this 20 minute taco meat recipe. I use my instant pot for this, but any pressure cooker does the same thing. I don't use my instant pot often, but when I do, it's always the pressure and sauté setting. Those two are great time savers, and they are key in this quick recipe. If you've forgotten to defrost your meat, you don't have to worry! Just add 2-3 minutes to the pressure timer and you're still done about 20 minutes.
