Malai Boti

Malai Boti

Can I tell you a secret? I like Malai Boti better than Tikka! It felt so good to say it aloud 🙂 I feel like tikka has been done to death, not that I don't love it. I just have something against tikka masala. Like please leave the bbq alone, no need to add a gravy to it. But Malai Boti is just so fresh. Maybe it's the coriander that gives it it's green color, or the cream that cools down the whole dish, whatever it is, I love it...

Chicken Salad Sandwich

Chicken Salad Sandwich

You are all witness to my love of sandwiches. I could eat them one after another until the whole tray is gone. These particular sandwiches are my favorite because of the crunchy vegetables that add a magnificent crunch. I like keeping the chicken chunky, so there's more of a bite to it. Are you team finely shredded chicken or team chunky chicken? The ingredients are very basic in this recipe, but the flavors combine to give such a nice flavor that you'll be making these on the regular.

Quick Chicken Jalfrezi

Quick Chicken Jalfrezi

Chicken Jalfrezi is a testament to how one ingredient can transform a dish completely. If you look through the ingredients you can see they consist of ingredients used in any chicken curry. The only difference is a bell pepper, also known as shimla mirch. Such a poetic name, no? This is the story of how one shimla mirch changed everything. Another thing to love is that Jalfrezi is classically cooked with boneless chicken, so it's not just me switching out the bone-in chicken for my convenience. But don't be fooled. This recipe delivers on all fronts. Flavor, texture, and looks, because that fresh pop of green does so much for this dish.Â
