It was a weekly ritual to have chai at my Khala's (Mom's sister) house and on our way, we always stopped halfway and picked up 2 plates of Bhallay from "Jamal's" right before merging onto the Nehar and driving all the way to her house. We never really had home made bhallay, but forward a decade to a suburbs of Chicago, with no "Jamal's" in sight, and you have yourself a problem. If I have to choose between salad and roasted vegetables, I will always choose roasted vegetables. Even over french fries. I love these honey butter roasted vegetables because they can be both. I've added some tips on how to turn these honey butter roasted vegetables into a great summer salad. The bitter arugula pairs great with the sweet and caramelized carrots. The potatoes make this hearty enough to be a vegetarian main course. I love the sweetness that's brought out by caramelizing the vegetables under high heat and how it contrasts the bitter arugula. Adding the honey into the butter marinade brings out even more flavor.

Turai ki Sabzi (Stewed Zucchini)

I used to hate vegetables as a kid. But oddly enough, one vegetable I loved was turai ki sabzi. I accidentally took a bite, not knowing what it was, and I loved it. It was sweet, yet spicy. It was soft, but not a complete mush, and my mom conveniently didn't tell me it was plain old zucchini until I was old enough to realize that I was enjoying vegetables. Needless to say I was shocked, and eventually began trying other vegetables.  Potatoes I can have in any form, but tori only hits the spot if it's stewed in an onion and tomato masala with a sprinkling of fresh cilantro, mopped up with fresh roti.
