Tex-Mex Lasagna

I love adding tex mex flavors to just about anything, like my Zesty Veggie Enchiladas, and this lasagna is taken over the top with all the flavors added to it. The corn and beans add such different textures, and my special secret ingredient adds a delicious earthy crunch you will go crazy for! I've been making this version for about a year now, and thought it was time to share it with you all. I use oven ready lasagna sheets which take a lot of prep time out, which is just added to the baking time, but as long as I don't have to do anything while it's in the oven, I'm happy:)

You know those dump everything together without really measuring too much, but still end up tasting bomb desserts? This is one of them, if not THE ONE. Chocolate Eton Mess is my take on the classic Eton Mess, a quintessential English dessert consisting of whipped cream, berries and crushed meringue. There's nothing wrong with that, right? But add some chocolate flair and you have yourself a winner!

You are all witness to my love of sandwiches. I could eat them one after another until the whole tray is gone. These particular sandwiches are my favorite because of the crunchy vegetables that add a magnificent crunch. I like keeping the chicken chunky, so there's more of a bite to it. Are you team finely shredded chicken or team chunky chicken? The ingredients are very basic in this recipe, but the flavors combine to give such a nice flavor that you'll be making these on the regular.

...When I go home to Lahore, the first thing I request (read insist) after a cup of chai is a steaming pot of Yakhni Pulao, always served with a cooling raita studded with fresh vegetables, and if I'm feeling a little extra, some Aloo ke Kabab as well...
