Chocolate Eton mess

You know those dump everything together without really measuring too much, but still end up tasting bomb desserts? This is one of them, if not THE ONE. Chocolate Eton Mess is my take on the classic Eton Mess, a quintessential English dessert consisting of whipped cream, berries and crushed meringue. There’s nothing wrong with that, right? But add some chocolate flair and you have yourself a winner!

Here’s what you need for this summer chocolatey strawberry dream:

1 tub cool whip OR 2 cups whipped cream whipped with 1/2 cup icing sugar to soft peaks

1/3 cup choc chips + 2 Tblspn cream

1 cup thinly sliced strawberries

1/2 cup mixed crushed Oreos and graham crackers

This is as simple as 1-2-3. The only work you need to do is crush some cookies, slice some berries, and if you don’t have access to cool whip, whipping some cream to soft peaks. Melt the chocolate chips and cream in 15 second bursts in the microwave, mixing after each turn until the chocolate is melted, then bring back down to almost room temperature.

Fold everything together, leaving the chocolate in streaks so it looks pretty and you get bursts of flavor through the mellow whipped cream. Serve chilled. This is such a simple yet decadent dessert, I’ll admit I’ve had my Nigella moment and found myself eating it our of the fridge while no ones looking!
