A classic if you’re from Pakistan, and quite possibly offensive if you’re Italian. Chicken tikka pizza is something that you can order from just about any small cafe located in markets around Pakistan. Even chains like Dominos and Pizza Hut have adapted to the local flavors and added this to their menu. But one thing is for sure, those local pizza spots know what they’re doing.
A soft chewy dough with a crispy crust, topped with spicy tomato sauce, studded with succulent cubes of chicken tikka, bell peppers and onions, topped with an insane amount of cheese only to be baked and sprinkled with even more spicy chili flakes and downed with a ice cold coke. That my friends, is what you should expect when you hear chicken tikka pizza, and I will not disappoint you.
Here’s what you’ll need for 1 large sized pizza
1/2 recipe pizza dough
1 chicken breast fillet, chopped into tiny cubes
1 Tblspn Shan Tikka Masala (you can also use my tikka recipe)
1/4 tsp garam masala
1 bell pepper, diced
1/2 onion, diced
3 Tblspn oil
4 Tblspn tomato sauce+1/4 tsp chilli powder
2 1/2 cups shredded mozzarella
Start off by making the pizza dough and setting it aside, covered, till it doubles in size. Prep the other ingredients during that tine. Marinate the chicken then sauté it in a little oil until cooked through. Roll out the dough to about 1/3 inch high. Sprinkle some corn meal over your baking tray, then transfer the dough on top. Spread over the sauce mixed in with the chilli powder. Then top off with 1/4 cup cheese, then the chicken, bell peppers and onions, then the rest of the cheese(you can add cheese according to your personal preference. I never add the full 2 cups).
Bake at 420F for about 15-20 minutes, or until the crust is a light golden brown and the cheese is bubbling and golden brown. The baking time really depends on your oven, so check the pizza after 12 minutes to make sure it doesn’t burn from the bottom. Cut into slices and enjoy with a cold coke!
